Cake Evelyn

This is a custom recipe I made for a little friend of mine, who cannot have eggs. It’s just a simple lemon yogurt cake with semolina and no eggs.

250g flour
100g semolina
100g sugar
350g greek yogurt
100g vegetable oil
1 package vanilla sugar
1 package baking powder
1 Lemon

Optional: Add 100g sugar more, if you like the case to be sweet. We prefer them not too sweet, but that’s up to you.

  • First mix all dry ingredients to avoid clumping
  • Add the wet ingredients, starting with the yogurt and then add the vegetable oil
  • Add both the lemon zest and the lemon juice. Add a second lemon, if you want
  • Bake at 180°C for 50 minutes
